Steak (in lime and tequila marinade)

The last couple of weeks I've been marinating affordable cuts of beef to have around as easy meals and lunches.
Having food planned and prepped helps each day run more smoothly.
I eat this on top of scrambled eggs with cheese or served with berries and cheese on the side. Eat it however you like!
The important thing is that I feel truly full, satisfied, and healthy after I finish a lunch like this. Each time I do something healthy for myself is a win in my book!
For this recipe I cubed a lean cut, eye of round, because it was on sale. I let the meat marinade for at least 12 hours before using it. The marinade is more like a rub or coating than a true liquid-y marinade, so the meat has been coated in it all week.
You can cook at the meat at once at the beginning of the week or you can cook up a single portion to bring for lunch.
The Recipe: Steak in tequila lime marinade
Notes: I've adjusted this recipe a couple of times because I didn't have tequila or orange juice. I just added more lime juice. I usually add extra salt too. Sometimes I just add a little bit extra of everything because I like a lot of flavor :)
Ingredients:
1 lb any steak, cubed (see above. I used eye of round because it was on sale. Use a more tender cut if you prefer)
Marinade ingredients:
1 tablespoon olive oil
1 1/2 tablespoons tequila
1 1/2 tablespoons orange juice
1/2 tablespoon lime juice
2 garlic cloves, crushed
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon oregano
1 teaspoon salt
pepper
Mix together marinade ingredients. Coat meat. Sprinkle extra salt on top if you desire (I usually do this).
Let sit 12 hours-6 days.
Turn a pan or cast iron to medium high heat. Add ghee or olive oil. Cook meat, stirring occasionally. Enjoy!
