Juicy, Crispy, Flavorful Chicken Quarters

With skin, bone in chicken quarters are my favorite type of chicken meat. My mouth starts watering even before they finishes cooking. Chicken quarters are incredibly juicy, they're so flavorful, and I really don't think you can mess them up.


Did I mention chicken quarters are the most economical cut of chicken? They're very inexpensive.


I've made chicken quarters a few types of ways. This recipe today is my trusty go-to, but it's by no means basic. Seasoned with only salt, it will be love at first bite. The skin is crisp and delicious, and the meat is juicy and flavorful.


I've accidentally overcooked these before, and then I learned there's no such thing. They were still amazing and juicy.


I have one confession to make about these. Chicken quarters (and thighs, and most dark meat) give off oils when they cook. Most people probably don't give that oil even a second thought when they sit down for dinner.


But not me. For some reason, that oil calls my name. Does my husband like it? He tells me I can have "his portion." So I do :) I pour it over my chicken right before I eat it, and I'm in Heaven.


Dinner doesn't get any better than this right here.


Many side dishes will go well with this meal, and tonight I made Lick Your Plate Clean Veggies. Broccoli (and carrots I had on hand) with a bright, buttery, lemony sauce.


Make as many (or as few) chicken quarters as you need. The recipe can be easily doubled or halved.



The Recipe

Ingredients

2 chicken quarters

coarse salt


Directions

Wash and pat dry chicken quarters. Grind coarse salt on both sides.



Air Fryer method: Turn your air fryer to 375 degrees. Set chicken inside facing upwards (skin side up.) About halfway through baking, flip to its other side and finish baking. Bake for about 40 minutes or until internal temperature reaches 165 degrees. Let sit a few minutes before enjoying!


Oven method: Over medium high heat, brown chicken on both sides, a few minutes per side. Place chicken in cast iron in a preheated 400 degree oven, skin side up. Bake for about 35 minutes or until internal temperature reaches 165 degrees. Let sit for a few minutes before enjoying!
