Grain Free Pancakes

Grain free. Refined sugar free. Seed oil free. Flour free. Gluten free.


And these pancakes are AMAZING.


I love a good Sunday brunch with eggs, pancakes, and bacon. But I dislike the bloat and tiredness that comes from the processed carbs. What I do like is being able to eat a full meal, feel very satisfied and comfortable, and then continue my day without a nap or lying down.


These pancakes don't weigh you down a bit. You will feel great afterwards! Your clothes will not become extra tight and you will have lots of energy.


Because these grain free pancakes have felt like such a treat, I've been serving them up with a "healthy frosting" that I sweeten with honey. (I believe honey has huge benefits to the human body and is an entirely different sweetener than white sugar or corn syrup which wreak havoc on the body.)


I can't take all the credit for this recipe. I saw this on an Instagram post from a group called Heart and Soil. I put my batter in a blender; they mash theirs up in a bowl. Both ways turn out great!


You do not need to wait for your bananas to get ripe to make this recipe. I've used ripe bananas and bananas with some green, and both turn out great.


This recipe can be very easily doubled or tripled. Just be sure to add a little extra butter to the pan when adding new batter!

The Recipe: Grain Free Pancakes

Serves: 1-2 people

Yields: about 5 pancakes

Time: 5 minutes


Ingredients

1 banana

2 eggs

1/4 teaspoon cinnamon (optional)


Instructions

  1. In a bowl or blender, mash/blend all ingredients

  2. Add 1 tablespoon of butter to a skillet or griddle, heat on medium heat until melted.

  3. Pour batter onto pan. Let cook for about 2 minutes or until the edges are bubbly and it's easy to flip.

  4. Flip. Cook the other side for about a minute.

  5. Remove from heat. Enjoy!!


Notes

Enjoy as is, or add toppings like I do. I love adding "healthy frosting" and fruit to make it a really nice treat.

Healthy Frosting Recipe:

4oz cream cheese, softened

3 tablespoons sour cream

1/4 teaspoon cinnamon

1 tablespoon of honey, or to taste


Add all ingredients in a bowl and mix with a hand mixer. Add extra honey if desired. Top with fruit and berries!
