Everything in the Garden Salad
I was inspired to create this Everything in the Garden Salad recipe when I ate something similar at a restaurant over the weekend.
My friend and I split an order of avocado toast as we caught up for hours. The company was great, and the food was delicious!
The avocado toast was topped with chopped cucumbers, red tomatoes, and bright feta cheese. It was one of those satisfying meals that leave you feeling good.
This summer salad recipe is super simple to make and you can eye ball the ingredients. You can easily serve it as a side dish with dinner or make a big bowlful and call it lunch!

The Recipe: Everything in the Garden Salad- summer salad recipe
Serves: 2 Time: 15 minutes
Ingredients
2 cucumbers
1 small tomato (I used Roma because it was available from my garden)
1/2 small purple onion
fresh dill (about 3 tablespoons)
fresh oregano (about 3 tablespoons)
salt and pepper
crushed red pepper (optional, just a dash)
generous sprinkle of crumbled feta cheese
Instructions
Quarter lengthwise and chop the cucumbers. Place in a medium size bowl
Dice the tomato and onion and add to the bowl.
Cut the dill and oregano and add to the bowl.
Season everything generously with salt and pepper. Add optional crushed red pepper. Drizzle generously with olive oil. Stir to combine.
Sprinkle feta cheese on top of salad until everything is lightly covered. Enjoy!
