Easy Meatballs

These easy meatballs are made with beef and pork, and I've included mozzarella, Parmesan, garlic and oregano to make them mouthwatering.
For meatballs to be delicious, they should be juicy and tender, and have great flavor. These have both!
The secret to good meatballs is incorporating all the ingredients into the meat but not overworking the meat. Once all the ingredients are evenly distributed and both of the meats are worked into the other, your meat is well mixed and ready to be formed into meatballs.
I've chosen to leave bread crumbs out of this recipe because we try to avoid processed carbs in our home. You won't even miss them! I've added extra mozzarella cheese for more flavor and juiciness.
One of my favorite ways to eat homemade meatballs is covered in homemade pasta sauce and baking it with mozzarella and provolone cheese. It makes a filling, high protein, unprocessed meal. And I know each ingredient that has been included!
I've chosen to bake these meatballs because I find it easier that pan frying. Both are great ways of cooking these.
To freeze the meatballs:
Cook as directed, cool completely.
Arrange them in a freezer container or freezer bag and freeze.
Defrost overnight in the refrigerator. Gently heat in your favorite pasta sauce on the stovetop.
Meatballs can be made ahead and frozen for 2-3 months.
The Recipe: Easy Meatballs
This recipe can be easily doubled or tripled and frozen.
Yield: About 20 meatballs
Cook time: 30 minutes
Ingredients
1 pound ground pork
1 pound ground beef
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 large egg
2 teaspoons oregano
1 teaspoon italian seasoning
1 teaspoon garlic powder
1 teaspoon salt
Directions
Preheat oven to 350 F.
Mix all ingredients until fully incorporated. Be careful not to overmix / overwork the meat.
Form uniform sized meatballs in your hand.
Arrange in a glass or stainless steel baking dish and bake for 25-30 minutes until internal temperature is 165. It's OK if meatballs touch.
Remove from oven. Serve warm and enjoy!
